Family Food Club - Deshni's Chickpea Biryani

Deshni wowed us all at the Family Food Club with this fragrant and flavourful biriyani recipe.

Deshni's Chickpea Biryani

Deshni's delicious recipe uses with one of my favourite ingredients, chickpeas, they're so delicious, cheap and nutritious! This recipe has more ingredients than usual but if you don’t have them all it’s fine to miss out a few, you’ll still have a delicious meal at the end!

Ingredients:

Oil

2 Onions, sliced

2 Garlic cloves, grated or paste

Thumb sized ginger, grated or paste

4 Cloves

2 Cardamom

2 Bay leaves

4 Tomatoes, chopped (you can also use yogurt)

1 Teaspoon chilli powder

1/4 Teaspoon turmeric

1 Teaspoon cumin seeds

1 Teaspoon garam masala

1 Can of chickpeas (you can also use vegetables or meat if you prefer)

2 Potatoes, pealed and chopped

Fresh mint, chopped

Fresh coriander, chopped

Fresh chilli, chopped

Lemon, sliced

1 Cup rice

Method

Prepare the rice:

  1. Soak the rice for at least 30 minutes
  2. Add 2 cloves, 1 cardamon, 1 bay leaf to the water for the rice
  3. Cook the rice but make sure it is still a bit firm before draining and setting aside

Prepare the curry:

  1. Heat the oil and fry the onion until golden brown, set half aside for topping
  2. Add bay leaf, cardamon and 2 cloves
  3. Add garlic and ginger and mix
  4. Add, chilli powder, turmeric, cumin seeds and garam masala
  5. Add chopped tomatoes (can used canned if you prefer)
  6. Add potatoes and chickpeas, cover and cook
Once the curry is ready layer the Biryani

1- Place half of the rice at the bottom of the pan

2- Add the curry

3- Top with lemon, coriander, mint and chilli

4- Add the remaining rice on top and place the onion you set aside on top

5- Add a few teaspoons of water

Optional: add kerala water and yellow food colour or saffron 

6- Cover and steam over a medium heat until the flavours combine (about 15 minutes)
