Easy Egg Muffin Recipe

Maria suggested this recipe because it is so adaptable to whatever ingredients you have at home and it can be made in the oven or the microwave! (or even on the stove as an ordinary omelet in a pan).

Makes: 12 muffins

Ingredients:

  • 6 eggs 

swap: less eggs depending on how many you would like to make

  • 2 tablespoons of milk

swap: some water or milk substitute

  • 1 cup of vegetables fresh, frozen or tinned, chopped up small

We used: courgette, peppers, frozen peas and olives. Other families also used: frozen broccoli, onions, tomatoes, carrots, chickpeas, kidney beans, aubergine, tinned sweetcorn, potatoes, tuna, meat... 

  • A large handful of cheese 

We used: cheddar but you can use feta, parmesan any cheese you like or none at all!

  • A teaspoon of seasoning

We used: dry oregano (which was very tasty!) but you can try fresh parsley or other dried herbs and spices

  • A little bit of oil, butter or margarine to grease the pan/tray/bowl/mug
  • Optional: half a teaspoon of baking powder will help make the egg mixture more fluffy

Method:

Step 1: Preheat the oven to 180

If you don't have an oven you can make this in a microwave safe dish or in a pan on the stove

Step 2: Chop all of the vegetables and grate the cheese

Step 3: Beat the eggs with the milk (and some baking powder if you have some)

Step 4: Add the vegetables, cheese and seasoning to the muffin tray then pour in the egg to cover

OR add the vegetables to the egg mix and put in a dish to put in the oven or microwave, or put in a pan on the stove

Step 5: Bake for about 15 minutes until cooked through

In a microwave times will vary, put it in for a few minutes and keep checking how it is going, you can put a knife in and if it comes out clean (no egg stuck to it) then it is ready!

On the stove it will take about 15 minutes to heat through, you can cover the pan so the top cooks more quickly.

Helen's Family's Favourite Bread Recipe

Helen decided to try and make her own bread at home to reduce trips to the supermarket. It's fresh, tastes really good and it reminds is of our childhood back at home in Ethiopia when we have it with some tea or just by itself. Helen based the recipe on one she found in Amharic on YouTube adapting it slightly (original recipe, here). She loves trying things from all over the world and finding recipes on YouTube as because she prefers videos because they're more visual.

Ingredients:

1 1/2 cup of warm water

1 teaspoon of dried yeast

1/2 tablespoon of vanilla

2 tablespoon of sugar

1/2 cup of milk

2 eggs

4 cups of all-purpose flour

pinch of salt

Method:

  1. Mix the dried yeast, vanilla, sugar, salt, milk and the eggs in warm water
  2. Once all is mixed well, sieve your flour and add it to the mix
  3. Knead the mixture really well, you can keep adding more flour so it is not too sticky (this is important because kneading it well means that the bread is fluffy and soft)
  4. After you finish kneading cover it and allow it to sit at room temperature for about 2 hours
  5. Cut the dough into smaller pieces and roll it flat with a rolling pin
  6. Then make a roll and leave them in the baking tray for 15 minutes
  7. Before you bake it brush it with some egg to make it golden and shiny
  8. Bake in a preheated oven at gas mark 6 for 20 minutes, you know it's ready when it turns golden on top
